Crawfish étouffée is a very traditional dish in Cajun and Creole cuisine. A thick, seasoned stew served over white rice, this hearty meal will leave you feeling full through the whole parade. The flavor meld of the onions, bell peppers and crawfish, all soaked in butter, is too good to have during a Lenten fast, even if it is technically meatless.
