Jambalaya is a dish of both Spanish and French influence. Along with rice and meat or seafood, this dish utilizes the "holy trinity" of Cajun veggies: bell peppers, onions and celery. Jambalaya is often confused with gumbo, but the former is more like a paella, while gumbo (which has African roots) is more like a stew.
