You don’t need an oven or even much time to make this mascarpone tart, which starts with a crust of smashed vanilla cookies. It’s easy and your kids will love it – they might even enjoy making it with you!
Ingredients:
2 cups (17 oz) mascarpone (chilled)
1 cup chilled heavy cream
3 tbsp powdered sugar
1 tsp of vanilla extract
7 oz vanilla cookies
5 tbsp melted butter
Ground cardamom (to taste) or cinnamon
Fruit of your choice
Place cookies in a blender or food processor. Mix them till they become finely ground crumbs. If you do not have a blender, put them in a paper or ziplock bag and crush them with a rolling pin (a bottle will do, too). In a bowl, mix the cookie crumbs, the melted butter, and a little bit of cardamom until well blended. If you don’t have or like cardamom, you can use cinnamon in its place.

Butter a 9-inch round tart pan (a removable bottom is a plus but not necessary). Pour the crushed cookie mix into the pan and press down to form a crust. Refrigerate while you make the filling.
In a bowl, combine mascarpone, heavy cream, and powdered sugar. Add the vanilla extract. Mix until smooth. Spoon the filling into the crust. Arrange the fruit on top and refrigerate for about two hours.
