The perfect low-fat lemon pie recipe

The light ingredients in this French-style low-fat lemon pie recipe will allow you to feast without any guilt! A summer treat any day of the week …

Preparation: 20 minutes
Cook time: 30 minutes
Refrigeration: 1 hour

Ingredients for 6 people:

1 sweet yogurt pie dough for the crust
1 whole lime
3 whole yellow lemons
50 g of sugar-stevia mixture (or agave syrup, if you prefer)
3 eggs
40 g liquid cream with 5% fat
40 g butter with 41% fat

Recipe for lemon pie:

1. Preheat the oven to 180° C. Spread out the dough and form a pie crust (24-26 cm). Prick the bottom with a fork, cover with parchment paper (not to be confused with wax paper), then bake for 15 min.

2. Meanwhile, grate the lemon zest over a bowl and squeeze out the juice. Add the sugar-stevia mixture, then mix in the eggs, lemon juice, cream, and melted butter.

3. Pour the mixture into the dough crust, then bake for 15 min.

4. Let cool, then refrigerate at least 1 hour before serving.
